4 slices of veal ossobuco (with bone)
1 carrot
1 onion
1 stalk of celery
300 g tomato paste or puree
1 glass of white wine
plain flour as needed
vegetable stock as needed
extra virgin olive oil

1️⃣ Preparing the meat
Lightly coat the ossobuco slices in flour on both sides and shake off the excess...
Heat the oil in a frying pan and fry the meat until golden brown. Set aside.
2️⃣ Base (soffritto)
In the same pan, add a little oil and chopped carrots, onion and celery.
Let soften over low heat for a few minutes.
3️⃣ Braise
Return the meat to the pan, increase the heat and add the white wine.
Once the alcohol has evaporated, add the tomato puree and a little hot stock.
Season with salt and pepper.
4️⃣ Cook slowly
Cover and cook over low heat for 1.5 to 2 hours, adding more broth as needed.
