1️⃣ Preparing the meat
Lightly coat the ossobuco slices in flour on both sides and shake off the excess...
Heat the oil in a frying pan and fry the meat until golden brown. Set aside.
2️⃣ Base (soffritto)
In the same pan, add a little oil and chopped carrots, onion and celery.
Let soften over low heat for a few minutes.
3️⃣ Braise
Return the meat to the pan, increase the heat and add the white wine.
Once the alcohol has evaporated, add the tomato puree and a little hot stock.
Season with salt and pepper.
4️⃣ Cook slowly
Cover and cook over low heat for 1.5 to 2 hours, adding more broth as needed.
The meat should be very tender and almost falling off the bone.
5️⃣ Gremolata (optional but recommended)
Mix parsley and lemon zest and sprinkle over food at the end for a fresh aroma.
🍽 Serve with risotto alla milanese, mashed potatoes or polenta - perfect for soaking up the delicious sauce.
